Determination of heavy metal contents and chlororganic pesticides rate in pork and beef produced in Rakvere Meat Processing Plant

A study was performed to determine the heavy metal contents as well as Cu, Zn, Fe in pork and beef produced in Rakvere Meat Processing Plant. In 1993 137 samples of muscle, liver and kidney were analyzed for Cd, Pb, Cu, Zn and Fe content. The samples were obtained from 46 slaughter animals from different regions of Estonia. 20 cows and 19 pork fat samples were taken for determination of chloroorganic. Samples were homogenized in Moulinette' type Mixer and mineralized by dry-burn method and were analyzed by the Shimadzu AA-660 Flame Emission Spektrophotometer. The contents generally did not exceed the maximum tolerance levels of metals allowed in Estonia, except 4 muscle samples from beef with mean Cd content 0,06 mg/kg, as well as one muscle sample of a porker with 0,13 mg/kg. The maximum tolerance level for Cd is 0,05 mg/kg and for Pb is 0,5 mg/kg in muscle samples in Estonia. The last one was not exceeded. As mean heavy metal contents in tested samples were far below maximum level, the Cd content was higher only in the muscles of animals from active industrial areas
