The authors measured the gluten content of some meat products purchased from trade circulation with the "Gluten Assay Elisa" kit CORTEX Diagnostics being well applicable to the detection of the gliadin content of heat treated meat industrial products containing gluten. At the product sample with extremely high fat content delubrication led to a considerable reduction in the gluten content
