Nutritive value of germs of some kinds of seeds

The present work encompassed the investigation of the biological and nutritive value of germs obtained from five different kinds of seeds (alfalfa, lentils, cowpeas, wheat and pumpkin). Optimal germination conditions and schedules were investigated and defined, and germ outbreak times, and conditions enabling the achievement of maximal vitamin C concentrations in the germs were also established. The "germ enriched" in this manner were preserved in a sour salty solution with vegetables in the form of salad. Three samples jundged as interesting for further more detailed investigations were also subject to analyses for the purpose of establishing the content of essential fatty acids in the grains and germs and determining the biological value of germ lipids.
