The influence of debittering of spent brewer's yeast on the content of some elements

The results of the influence of debittering of spent brewer's yeast with aqueous solution of sodium carbonate (1), sodium pentatriphosphate (1), and sodium chloride (4) on the content of some elements are presented. The authors had found out that the debittering influence the higher content of the mineral matter in debittering spent brewer's yeast. Debittering spent brewer's yeast has higher content of As, Pb, Cd and Hg. The quantity of these toxic elements in debittered spent brewer's yeast were below allowed quantities in food protein preparations.
