Indicator for quality evaluation of broccoli [Brassica oleracea italica]

For the selection of an indicator for quality evaluation of broccoli during storage and distribution, five indicators, consisting of visual quality score, instrumental color value, chlorophyll content of florets, ascorbic acid content of florets, and free sugar content of florets, were compared. Decrease of ascorbic acid content and free sugar content of florets occurred earlier than the changes in the other indicators during storage (15 C, 90% RH). The decrease of the ascorbic acid content was not affected by the preharvest conditions; varieties, nitrogen fertilizer application, and harvest time. It was demonstrated that the ascorbic acid content of florets was one of the best indicators for quality evaluation of broccoli
