The importance of meat in human diet is explained. Factors determining farm animals' meat quality are defined. Nutritional value of beef, pork, mutton, veal and poultry is compared considering the content of fat, protein, vitamins, trace elements and calories. Meat consumption as a factor determining the living standard of a country is discussed. The amount of meat consumed by one person per year in several developed countries is shown in kg and compared with that in Latvia.
