Nutritive values of fast foods: Main nutrients

At present information on nutritive values of fast food is still not available, especially in Thailand. This information is becoming more and more important in terms of nutritional disease such as obesity, artheriosclerosis and hyperlipidemia. Therefore, in this study main nutrient contents in various fast foods collected from 4 main shopping centres in Bangkok were determined by conventional methods. The average energy content was 232 kcal/100 g whereas the average protein, carbohydrate and lipid contents were 10.9 (4.2-14.9) 23.4 (17.2-36.2) and 13.8 (10.3-19.1) g/100 g, respectively. Cholesterol causes artheriosclerosis was found to in the range of 31 to 79 mg/100 g. Consumers and nutritionists have also paid attention to dietary fiber content of processed food. In this study, the detected amount of dietary fiber in fast foods was relatively low and ranged from 1 to 5 g/100 g.
