Content of microelements (Cu, Zn, Fe, Mn) in meat and giblets of broilers breeded on farms

In a one-year intensive production of over 300,000 broilers safety and quality of fodder mixes were regularly analyzed. Besides the usual parameters, the content of copper, zinc, iron and manganese was determined. From the slaughtering line, broiler trunks were sampled using the method of random choice, and in their meat (leg, breast) and internal organs (liver, heart and muscle stomach) cited microelements were also determined. The results show that breast has the lowest content of all investigated microelements, while the content of microelements in internal organs is considerably higher than values for meat, with the liver having the highest content of all investigated microelements.
