Heavy metals, pesticides and histamine in meat and fish

The given research was carried out to determine the content of heavy metals as well as Cu, Zn, Pb, Fe and chlorogenic pesticides in pork and beef produced by the Rakvere Meat processing Company. The animals were brought from various districts of Estonia. Muscle, liver and kidney samples taken from 46 slaughter animals were analysed for Cd, Pb, Cu, Zn and Fe content. The content of histamine was determined in fresh and smoked fish as well as in some meat products. The preparation of the samples and the method of analyses are described. The resulting data are presented in tables. The conclusion has been drawn that although the heavy metal content in meat does not exceed the maximum tolerance level allowed in Estonia, its amount is too high in the regions of intensive industry.
