[Cytochrome spectrum changes after incubation of baker's yeast in rehydration milieu]

To produce baker's yeast suitable for drying, methods of yeast cultivation have been developed by which yeast is cultivated in several stages changing the rehydration milieu and aeration. The aim of the given experiment was to prove that rather slight changes of incubation conditions can change the relation of reduced cytochromes. The influence of rehydration milieu on cytochrome absorbency relation after oxygen consumption was studied. It was observed that 100% oxygen stimulated cytochrome absorbency relation changes, however degassing of rehydration milieu had the opposite effect.
