The subject of this thesis is concerned with the diffusion process of a new technique of extraction of olive oil. This technique is based on a continuous two-way extraction process which preserves the environment. After a short review of the basic concepts and the socio-economical factors affecting the adoption of any technological innovation by firms in a traditional industry, we made a specific analysis of different steps accompanying the adoption of two-way extraction of olive oil as well as the implications of this innovation on the whole oleicultural sector. This study is not only based on written documentation but also interview with many experts of various origins, researchers, engineers, machine manufactures as well as users of the sub-products of the oleicultural industry. We also used statistical data and a survey carried out on a representative sample of oleicultural concerns located in Cordoba and Jaen provinces (Andalusia, Spain). These investigations allowed us to make an analysis of the innovation process adoption. We also performed a prospective survey in the west of Algeria (Oranie) where this new technology is still absent in order to study the possibility of its diffusion: it is concluded that the diffusion of this new technology is not feasible at least in the short term.
