Determination of biogenic amines in wine by HPLC

A liquid chromatographic method for determination of the presence of the biogenic amines putrescine, cadaverine, histamine, and tyramine in wine is described. The amines were analyzed after precolumn derivatization with dansyl chloride and extraction with toluene. Separation of amines was performed on reverse phase column with an acetonitrile-ammonium acetate isocratic elution, using UV detection at 254 nanometres. The content of biogenic amines in wines before and after treatment with the clarifying agent bentonite was also determined
