Distribution of total and water soluble and insoluble phytin in maize hybrid seeds

The phosphorus content of air-dried sample ranged from 2.94 to 3.70 mg/g in kernel, from 16.81 to 24.15 mg/g in germ and amounted to approximately 0.50 mg/g in endosperm. The phytin content amounted to below 1, 5.8-7.2 and below 0.1 in the whole kernel, germ and endosperm, respectively. Above 90 of total phosphorus in three out of six hybrids were in the form of phytin, while about 70 of total phosphorus in the form of phytin was found in one of hybrids. Water soluble phytin in germ ranged from 52 mg/g (ZPTC 209) to 72 mg/g (ZPTC 300b), i.e. 82-100. The corresponding values amounted to 29-90 in endosperm. Water insoluble phytin was determined in the whole kernel and endosperm, while it was found in traces in germ. The greater differences regarding the correlations of phosphorus with total and water soluble phytin in the whole kernel, germ and endosperm were found in hybrids of the FAO 200 and also among hybrids within this maturity group than in the hybrids of FAO 100 and FAO 300.
