Milk yield, composition and cheesemaking properties of ewe's milk produced from Southbulgarian Corriedale breed

The yield, composition and properties of milk produced from the basic breeding herds of Southbulgarian Corriedale breed were studied.It has been established that the average duration of the lactation period for the breed is 180 days.The daily milk yield and milk yield for lactation period are respectively 682 g and 123 l.The average content of dry matter, fat, protein and casein in the milk is 19.21, 7.86, 6.09 and 4.50%, respectively.The cheese yield at 6.5% fat content of the milk and 50% dry matter content of cheese is higher with 1.5 kg in Jambol herd, compared to the other groups.
