Effect of weather conditions at harvest on technological quality of wheat varieties from different maturity groups

Three wheat genotypes taken from the same site on different occasions during a late harvest were used in the study, the presumption being that the activity of the enzymatic complex peaks six to eight days after the resumption of water uptake. How far the process of thermal and enzymatic degradation of starch in the grain and bread during baking had progressed was determined based on differences between the indicators studied both in terms of different harvest dates (July 5, July 11, July 14) and different varieties used (Pobeda, Rodna, and Novosadska Rana 5).
