Body composition and EUROP evaluation in cattle carcass

A new evaluating system was developed based on the actual slaughtering and boning data of 3049 beef cattle. Similarl to EUROP system 5 categories were funded. Classification of 22.6% of bulls and 26.7% of heifers fit the EUROP evaluation and the actual meat %. Categories of the new evaluating system and the EUROP system were the same only in 41% of bulls and 20% of heifers. These results confirm the need for the development of an objective evaluating system.
