There are very few data about the alveograph bread-making quality of Hungarian wheat varieties. The aim of the present work was to determine the quality of wheat from Szeged by alveograph and to study the effect of crop-year on the alveograph values. The quality of 29 winter wheat varieties grown after mustard forecrop was determined over 3 years. The following quality parameters were tested: wet gluten content, farinograph value, alveograph P, L, P/L, G and W values.
