[Pollen drying problems]

An original pollen extract containing carotene has been obtained at the Food Technology Faculty of the Latvia University of Agriculture. This extract can be used in food production industry as well as in cosmetics as a colouring or a seasoning agent. The extract contains soluble compounds, the obtained dry matter is in the range of 0.2-4.0% depending on the kind of solvent and on the pollen moisture content. The aim of the present research was to investigate the pollen drying conditions in order to recommend them for commercial processing of pollen. It has been concluded that for the needs of large enterprises more effective pollen drying methods should be elaborated.
