Pork carcasses and meat quality evaluation of Latvian White and Landrace Breeds

To make the pork produced in Latvia competitive in both local and foreign markets a few research works on carcass and pork quality have been carried out. The aim of the present research was to evaluate and analyse carcasses and pork quality of Latvian White pigs and their crosses bred in Latvia. The method of the research is described. Measures of Latvian White pigs' carcass parameters and the backfat over the backbone as well as the meat quality parameters of Latvian Landrace breed pigs are presented in tables.
