[Egg yolk omega-3 fatty acid content of the hens of different layer crosses]

The importance of the omega-3 fatty acid content in foodstuffs is explained. Though the egg yolk omega-3 fatty acid content depends highly on poultry feeding, the differences in it have been observed in different avian species, hen breeds, lines and crosses. Due to the absence of the data on the egg yolk omega-3 fatty acid content in the chicken crosses being raised in Estonia, a study was conducted to find out which chicken cross would be the most profitable one for producing so-called omega health eggs fortified with omega-3 fatty acids. The trial was carried out at the Kehtna Poultry Testing Station in 1998-1999. Fatty acids were determined in the Ecochemistry Laboratory of the Estonian Agricultural University Chemistry Department. The egg yolk fatty acid content (% of total lipids) of different chicken crosses is presented in a table.
