Thermal properties of bamboo shoot at different moisture levels (ranging from 55 percent to 92 percent wet basis) was determined. Properties including density, specific heat, thermal conductivity and thermal diffusivity were presented in the form of suitable prediction models. An analysis of variance (anova) revealed that the bulk and true density, specific heat and thermal conductivity were affected significantly by moisture. Bulk density and true density varied from 214 to 577.6 kg/cu m and 776 to 1125.4 kg/cu m, respectively. An increased in moisture content increases the bulk density of bamboo shoots while for true density an opposite trend was observed. The method of mixtures was used to measure the specific heat of bamboo shoot varying from 1.66 to 2.53 KJ/kg-K with the data fitting best to polynomial models. The thermal conductivity which was determined by the modified fitch method varied from 2.221 to 1.0495 W/ m = K and 0.0214 to 0.0414 W/ m-K, along the transverse and longitudinal directions, respectively.
