The effect of triazine herbicides applied to the stratifying substrate on the content of saturated and unsaturated fatty acids fixed glycerides of crude fat and on the changes in the pattern of protein components in cherry plum seeds were investigated. Herbicides applied at the rate of 0.5 kg/ha increased the concentration saturated fatty acids in triglycerides (palmitic, stearynic and izopalmitic) and given at the rate of 2 kg/ha resulted in a lower their content. The applied herbicides had no appreciable effect on unsaturated acids. Protein electrophoresis was performed in three replications of the seeds: before stratification and after 2, 6, 10, 14 and 18 weeks of stratification In the seeds being in the rest period 11 anodic and 2 cathodic components were found. After 42 days of breaking the seed rest their number decreased. The highest drop in the components was noted in seeds from control and from the herbicide treatment with 0.5 kg/ha
