The quality of meat of bulls from commercial crossing of the domestic Bohemian Spotted dairy population with meat breeds

One of the many measures which should help improve beef quality is to increase the share of feeder cattle for fattening purposes applying commercial crossing of domestic dairy breeds and efficiency types with specialised meat breeds of cattle. The nutritional and technological quality of the musculus longissimus part thoracis were evaluated, and positive and significant differences in some of the evaluated quality traits between the control group (bulls of Bohemian Spotted cattle) and crosses with six meat breeds were found. The most marked differences in the average values of the evaluated groups of bulls were found when analysing the protein and fat content, and energy value of meat. The differences among the groups of bulls, sons of fathers of the other meat breeds, were insignificant. The differences among indicators of the technological meat quality were lower, mostly insignificant.
