Using fourteen foreign and domestic cucumber cultivars, we established a simple method for estimating edible quality. We selected two superior edible quality cultivars when their fruits were harvested at a weight ranging approximately between 200 and 350g. 1. Using eight cultivars of cucumber fruits which weighed about 250g each, we analyzed the relationship between test scores for edible quality values of flesh puncture force readings and placenta ratios. There is a functional relationship between them. The function is as follows; Y = 0.0151b - 0.0192c - 2.349, where Y is test scores for edible quality, b is flesh puncture force readings (g) and c is the placenta ratio (%). 2. We measured the 200-350g fruits which were harvested both in a normal greenhouse culture and in forcing culture. 'NEVADA' and 'KU-369' were found to have high values for flesh puncture force readings and low placenta ratios
