Effect of age and fat accumulation on carcass composition of young fattening steer

The effect of aging and fat accumulation on the carcass composition of young fattening steer was examined to obtain suitable finishing weight. Steers of Japanese Black Cattle (24 head), Japanese Shorthorn (28 head) and Holstein (19 head) from 9 to 27 months old were used. Total number of steers was 71. The results were as follows; 1) Breed differences were observed in the quantitative increase of muscle in the carcass. The growth of muscle tissues in Japanese Shorthorn ceased at the age of 24 months. While in Japanese Black Cattle, there was a slight increase after the age of 24 months. 2) Accumulation rate of adipose tissue in the carcass was in the order of Holstein, Japanese Shorthorn and Japanese Black Cattle. Japanese Shorthorn showed a high accumulation rate from the age of 9 to 15 months, while Japanese Black Cattle showed a high rate after the age of 15 months. Japanese Shorthorn and Japanese Black Cattle stored almost the same amount of fat in their carcass at the age of 27 months. 3) Japanese Black Cattle showed a difference in muscle growth based on the fatness of the carcass (carcass composition of adipose tissue in relation to weight). This bred continued to store muscle tissue (lean meat) even though the carcass fatness increased
