Amylase and protease activities in the various seeds

To ascertain whether amylases and proteases are universally present in the seeds, these activities in the crude extracts prepared from the various seeds were investigated. The highest amylase activity was found in pumpkin and followed by in kidney bean and peach. The highest protease activity at pH 4.0 was found in pea, and that at pH 8.0 was in water melon. The results obtained from the amylase reaction at several temperatures suggests that this amylases in the crude extract prepared from pumpkin was relatively stable against heat. The effects of the inhibitors on the protease activities were different among the seeds and the activities changed at different pHs, suggesting the presence of at least two proteases in the seeds.
