Meat quality and meat productivity of the pigs with porcine stress syndrome genotype (PSS)

Purebred litters from LARGE WHITE were classified three stress genotypes; homozygous stress-positive, heterozygous stress-carrier and homozygous normal. Meat quality and meat productivity of the pigs with three genotypes were investigated. Results were as follows. 1) The group of the stress-positive genotype had higher meat productivity, but lower meat quality compared with other two genotypes. 2) The groups of the stress-carrier and normal genotype had a similar meat productivity. But, the tenderness and water-holding capacity of meat differed significantly between the groups. 3) The group of the normal genotype had favorite meat quality. These results suggest that the selection of pigs with homozygous normal genotype is important to improve meat quality
