Effect of light on synthetic dyes stability in vodkas: azorubine- E 122, ponceau 4R- E 124 and indigo carmine- E 132

The light and by-products effect on synthetic dyes stability in vodkas 30 percent by vol. strength were tested in this paper. Samples of vodkas were illuminated at 13 klx in colourless bottles of 0,1 L capacity. It was stated, that vitamin C caused the strong discolouring effect on vodkas with E 122 and E 124. The following by-products were present in the tested vodkas: raw spirits, distillates and flavourings had very weak effects on vodkas coloured with E 122 and E 124 at experimental period of 40 days. The simultaneous presence in vodkas of saccharose and citric acid had negative effects on E 122 and 124 just as vitamin C. Indigo carmine E 132 was unstable in general
