Carcass quality of simmental, brown and holstein breeds and their industrial crossbreed

Carcass and meat traits of Simmental, Brown and Holstein bulls and crossbreeds between Brown and Belgian Blue, Holstein and Belgian Blue bulls and Holstein and Piemontese are presented in the following contribution. Among our three breeds, Simmental breed exhibited the highest carcass quality, followed by Brown and Holstein breed. In meat traits there were no important differences among three breeds. Crossbreeds with Belgian Blue breed had higher dressing percentage, higher lean and lower fat content in the carcass. In meat traits the differences were less pronounced. Crossbred bulls had lower intramuscular fat content in comparison with purebred bulls and higher subjective evaluated meat tenderness in comparison with Simmental bulls. Crossbreeds between Holstein and Piemontese exhibited beside higher dressing percentage, carcass conformation and composition also higher meat tendernes than Holstein bulls.
