[Electrophysical method of control at the pectin production]

Based on developing the electrophysical method of determining pectin in technological media at the Ukrainian State University of Food Technologies a contribution is done to creating non-waste processing technologies for fruit and vegetable raw materials by means of setting up the pectin and pectin-containing products production. The method is based on measuring electroconductivity of pectin-containing extracts. The dependence is determined of pectin extracts' electroconductivity on the dry matters content, pectins as well as on the medium's reaction. The results obtained characterize the pectin-containing extracts as conductors belonging to weak electrolytes. The studies show that for temperate concentrations of dry matters the extract's electroconductivity may be presented as linear functions of the microparticles charged. The conclusion are drawn according to the pectin concentration in the extract. The unit proposed is distinguished by simple design and availability. It provides accuracy of measurements up to 6 %, does not require chemical reactives, special personnel and a premice for industrial introduction
