Hydrolysates of the whole maize kernel were used as a source of carbon in mediums for alcoholic fermentation with Saccharomyces cerevisiae in batch reactor with continuous stirring. The obtained results indicate that hydrolysates of maize kernel, with their favourable carbohydrate composition and sufficient content of nitrogen and mineral components, represent an exceptional medium for alcoholic fermentation. There are no substances preventing yeast growth in starch hydrolysate from the whole kernel, what enables mash recirculation into the phase of raw material preparation, suspension of ground maize kernel. Insoluble parts of maize kernel isolated after saccharification are exceptional cattle feed, both in raw and dried form.
