Water for particular purposes in production process in a dairy (cleaning water, water as a raw material) must be disinfected, eventually sterilized; perhaps, disinfection may be also necessary for cooling water. After results of water disinfection was discussed, disinfection processes applicable in a dairy, which depends of water origin and characteristics, as well as of dairy size, are discussed in details (chlorination, using of chlorine dioxide, ozonization, UV-radiation, etc.).
