Influence of Allium sp. extracts on oxidative changes of lard and sunflower oil

This paper deals with the antioxidative effect of ethanol extracts obtained from different Allium sp. Test for antioxidant activity were conducted on prime steam lard and sunflower oil. The antioxidant activity of each extract tested was bared on its ability to prevent the formation of peroxide in lard and oil. Samples were kept at 60 deg C without light. Peroxide values were determined for the following of oxidative state changes. The results show that the ethanol extracts of all Allium sp. have a better antioxidative effect in lard than in oil. The best antioxidative effect had the extract of false and true stem of Allium nutants.
