Technilogical studies related to the freezing of tomatoes cut into small cubes

It is presented the results from implemented in industrial conditions studies with batches 500-550 kg each taken from 8 cultivars tomatoes having the freezing potential. It is given a technilogical characteristics of every one cultivar. It is paid the main attention to the cutting and freezing operations, as well as the capacity of the available equipment installed in the freezing workshops. It is determined the appropriate cultivars, as well as the fundamental parameters of the technology for the freezing of tomatoes cut into small cubes.
