Analysis and evaluation of some new varieties of margarines produced in Bulgaria

保加利亚语. Market samples of some new varieties of margarines produced in this country were analyzed. They included margarine for children "Olinezko",prodused by "Olineza" Ltd, and Bella" and "Bella Light" margarines, prodused by "Unibell" Ltd in cooperation with "Unigra", Italy. The following indices were determined: sensor evaluation, peroxide value, acidity and fatty acid (trans-fatty acids included) pattern. Total amounts of saturated, unsaturrated, trans-fatty acids, and their ratio were evaluated, and therefrom lipid prevention score was calculated. The latter was indicative how well fatty acid pattern of margarines was balanced and exhibited their preventive role in cardio-vascular diseases. All indices were taken into acount in the evaluation of the margarines analyzed. The "Bella" products had very good sensor characteristics and low trans-fatty acid content."Olinezko" margarine had also good sensor characteristics and did not contain trans-fatty acids within the range of sensitivity of the method used. Oxidative changes of all three products were within the range of the legislative requirements until the expire date.
