Flavour substances of carrot cultivars

Different carrot cultivars were examined for glucose, fructose, saccharose and volatile substances. Altogether 95 samples were analysed for sugars in three consecutive years. The effect of storage, irrigation and Mg2+ treatment was also studied. Saccharose was the dominant sugar, while glucose to fructose ratio was over one. Irrigation and magnesium foliage spray had almost no influence on sugar content in the tested cultivars according to PCA. The cultivar and cropy year was found to be affecting factors.
