With his through grounding, great ambition and firm professional conception Professor Karoly Vas was head of the Department of Food Technology and Microbiology of the College of Horticulture and Viticulture between 1959-1967. The basic research and the research-development activity of the department can be put in seven groups according to their subject. One of them is the post-harvest research concerning the storage of fruits and vegetables. Among the results it is worth to stress the modernization of the cold storage technology of dessertgrapes and the use of up-to date enzymological and microbiological knowledge to obtain those results which proved the scientific cognition and controllability of plant physiological changes in case of irradiation of potato and onion.
