Enzymatic treatment to enhance oil recovery from oilseeds has been used with excellent results both on a laboratory and industrial scale. Enzymatic treatment is different depending on its action on seeds. Some studies by several author when the enzymatic treatment was applied indicated that there are a number of variables factors affecting the enzymatic hydrolysis of oilseeds. However, the pH and temperature condition for hydrolysis are similar for each enzyme. In the case of oil extraction process two advantages are offered by this treatment: higher yields of oil and higher quality of the meal. This article reviews and discuss the method of enzymatic pretreatment of oil extraction from oilseeds, factors affecting the enzymatic treatment of oilseeds and product quality of oil and meal
