Pressed grape skins of a mixture of technical grape varieties are under investigation, as well as higher basidium fungi strains with the aim of the scientific substantiation and development of biotechnology of feed protein product (FPP) using SSC of the basidium fungi on the pressed grape skins. As a result, an experimental and industrial bioreactor model is developed and tested as well as the process flowsheet and norm documents, process requirements relative to the bioconversion process bioreactor are provided. Innovation aspects of the work are as follows: scientific substantion modes and parameters of the SSC of higher basidium fungi; specific features are studied of qualitative and quantitative changes in the chemical composition's compounds in the "pressed grape skins - FPP" system. The basidium fungi screening is carried out in order to accumulate the biomass when grown on the pressed grape skins and the best five FPP-producing strains are disclosed. The effectiveness is found of lowering the acidity biologically at the stage of processing the pressed skins. The technology proposed of obtaining FPP is introduced at a number of farms of the South of Ukraine and the Crimea
