[Developing a technology of obtaining a dry lactic acid bacteria concentrate]

The thesis devoted to the development of the technology of obtaining dry concentrated starter based on Lactobacillus bacteria with stable properties and high titre of cells, characterized by the resistance while storing, is aimed at producing dairy products of high nutritive and prophylactic value. A nutrient medium is developed and also optimum production operating modes of ultrafiltration membrane for concentrating the bacterial mass. The possibilty is shown to dry the bacterial concentrate in a boiling layer on inert material and a protective medium is developed for maximum preservation of the viability of the lactobacterial cells
