The use of growth promoters in animal breeding, their influence on meat quality and the importance of residue control

The authors suggest the effects of application of hormones, beta-agonists and some chemotherapeutics as growth promoters, which are reflected in: better feed effciency. the increase in total weight of animals, better conformation of carcasses, muscle weight increase, reduced fat depots, redistribution of nutrients from fatty into muscle tissue, etc. Their influence on parameters of meat quality (water, fat, proteins, pH, muscle colour, water binding capacity, etc.) and toxic characteristics are also discussed and they indicate the potential hazard for human health as the consequence of intake of these residues of these compounds through meat of treated animals. In that respect, the authors think that it is necessary to create and carry out programmes for systematic investigation of residues in farm animals and on the slaughter line, and the priority should be given to the development and application of sensitive analytic methods and techniques.
