Contents of copper, zinc, manganese and iron in industrial carrot varieties and lines

Considerable differentiation in the microelements contents among the carrot varieties and lines under the study was observed. Considering fact that the carrot was cultivated on the same soil and under uniform agrotechnical regime the differences should be recognized as variety properties and cumulation pattern of the elements under the study was variety attribute. In 40-55 percent varieties average Mn and Zn levels neared values published in Polish tables of composition and nutritive value of food products while average Cu and Fe - were lower ones. All the examined carrot varieties comply with the requirements of consumption usefulness in regard of copper and zinc content
