Chufa bulbs grown on soil class IVb, with less intensive nitrogen fertilization, were characterized by higher content of sugars soluble in a 50 percent solution of ethyl alcohol than these grown on the soil class IIIb. The main soluble carbohydrate was saccharose, whose content was decreasing with an increase in the level of nitrogen fertilization. The content of sugars considered antinutritional was growing with an increase in the fertilization level, which indicates that low nitrogen doses should be applied in chufa cultivation. The starch content of chufa bulbs varied from 22.87 to 28.03 percent
