Slaughter walue of horses and meat quality depending on age

The estimation comparised 646 horses. 117 horses were put to dessection and physico-chemicals analysis. The investigations showed that colts were characterised by higher dressing percentage and more content of meat in comparison to the adult horses. Moreover, meat tissue of colts was characterised by better tenderness, colour and less marbledness. Age had no essential influence on the psisico-chemical traits of meat tissue except tenderness
