Storage life of bovine lungs at cold temperatures

Quality changes taking place in lungs during its cold storage at 4 deg C for 14 days were studied. The lungs were divided into 4 groups to find the possible effect of wrapping and prefreezing. The qualilty changes were evaluated taking into accout the levels of soluble protein and amino nitrogen, pH value and weight losses. The obtained results showed the highest stability of soluble protein whose amount remained nearly the same throughout the time of storage. In contrast, a significant increase in the amino nitrogen content was observed, especially in prefrozen samples. In this case also the losses of weight were more intensive
