Estimate fatness of broiler carcasses

140 broiler carcasses were examined from the provenance ross. Chickens were classified as for sex and body weight on light, medium and heavy weight. A chemical composition, sensory and instrumental traits on chicken were assessed. The effects of sex and body weight on the studied traits were statistically analysed. Hence it follows that sensory valued fatness and colour, share of abdominal fat and instrumental measurements of parameters L* and a*, may be used as a criterion of the degree of fatness of the whole broiler carcasses.
