An exact three-year agricultural field experiment was carried out in a maize production area with the Hana-variety winter wheat that was grown in every year after winter rape. The goal of this experiment was to determine the impact of differentiated amounts of nitrogen on the formation and quality of wheat grain yield. The differences in the yields achieved in all three years are statistically highly-significant to significant. The influence of a year of crop manifested itself as the dominant factor. The yield amount ranged from 6.71 t/ha on the nonfertilized variant to 7.43 t/ha on the variant with an average amount of 25 kg/ha N. Based on a three-year results evaluation concerning the increase of gluten content, compared to a nonfertilized control, it can be stated that all fertilized variants are showing statistically highly-significant differences. The gluten content ranged from 25.93% - on the nonfertilized variant to 35.61% on the variant with the largest amount of nitrogen - 124 kg/ha N. The content of crude protein is influenced by the amount of a yield and by the amount of nitrogen added
