[Scientific bases of the theory and techniques of drying food raw material in mass exchange modules]

The study is referred to the field of food industry and is focused on process of drying food raw material with the aim to develop a theory, according to which rational modes of drying of raw materials in mass exchanging modules and apparatuses are calculated in order to practically realize thereof. While carrying out the study, original, standard and analytical methods were involved. The innovation of the study lies in the fact that, while studying the drying food raw material in the mass exchange modules, for the first time a physical model of heat and mass exchange is developed and proved and new types of drying aparatuses are developed. As a result, a principally new energy-saving method of drying food raw material is developed. A number of farm driers are practically applied
