Processing quality and safety of wheat originating from different growing regions

Processing quality of wheat depends on the genetic potential of wheat varieties and the environmental conditions. To perceive total quality of wheat varieties that includes processing quality, nutritive value and safety, it is necessary to evaluate all aspects of processing quality, levels of toxic residues, macro- and micro-elements. In the present work, several wheat varieties from commercial production and variety trials originating from the region of Vojvodina (Serbia, Serbia&Montenegro) were investigated. The collected wheat samples belonged to each of the three wheat classes. The aim was to evaluate total quality of the wheat varieties depending on environmental conditions of different wheat growing regions. Results point the necessity to separate wheat into classes to assure consistency in end use quality as well as to accomodate regulations in force.
