Presence of fusarotoxins in wheat

The artificial inoculation of the spikes of the wheat varieties Yugoslavia, France and PKB Lepoklasa was performed with the Fusarium spp. isolates. After the harvest, the followig mycotoxins were detected in grain, flour, bran and bread: zearalenone, fumonisins and deoxynivalenol. In bread, the presence of fumonisins was not proved. The presence of fungi and mycotoxins affected mostly the Yugoslavia wheat variety which is in the farinologic qualitative group B2, France wheat variety is in A2 while no change in the farinologic qualitative group was noticed in the PKB Lepoklasa wheat variety.
